To help celebrate St Patrick’s Day this year, the leprechauns behind each counter have been hard at work gathering some gold for your holiday table. In the cheese department, we have a wheel of Coolea, a young Gouda style made by Dick Willems, who was born in Ireland to Dutch immigrants, the original cheesemakers. Using their knowledge of making a great Dutch Gouda style, they’ve transformed milk from a tiny herd of grass fed cows into a super cheese, buttery and herbal, with notes of butterscotch, endive and toasted brioche.
In a collaborative effort between the butchers and the deli, we’ve got house-cured, grass-fed Corned Beef, available sliced to order, or by the lb in a larger piece. Produce’s Potatoes and Cabbage rounds out the Irish meal. And for dessert: Coolhaus Ice Cream Sandwiches, in a few flavors, including Potato Chip Cookie w/ Guinness Ice Cream.
