Take a break from pancakes! With this simple recipe, the hardest thing is finding the waffle maker hidden in your cupboards. If you’re feeling fancy, you can separate the eggs, whip the whites and fold back into the batter at the end. Beats flipping flapjacks!
2 cups flour
1/4 teaspoon salt
2 tablespoons sugar
1 tablespoon baking powder
1 1/2 cups low-fat or whole milk
2 large eggs, lightly beaten
3 tablespoons melted unsalted butter, slightly cooled
1 teaspoon vanilla extract
Combine the flour, salt, sugar and baking powder in a large mixing bowl.
Whisk together the milk, eggs, melted butter and vanilla extract in a separate bowl. Add to the flour mixture and mix just until combined and no dry streaks remain; do not overmix.
Cook according to your waffle maker’s directions.
