Turkey Curry

Thanks to the marvel of the internet, this treasured family recipe was able to be googled and its best approximation found. Enjoy!

1 tbsp. butter
1 cup chopped onion
1 c. apple, peeled, chopped
1/2 c. green pepper, chopped
1/2 c. mushrooms, sliced
1 tablespoon curry powder
1 c. condensed chicken broth
1 c. light cream
1 c. milk
2 c. turkey in bite size pieces
1 tsp. lemon juice
2 tbsp. cornstarch
2 tbsp. cold water

Saute apples, onions, green peppers and mushrooms in butter until soft. Add curry powder. Add chicken broth. Bring to a boil. Add cream and milk, bring to a boil. Mix cornstarch and water to make a paste. Add cornstarch mixture to sauce and vegetables. Cook until thick. Add turkey and lemon. Salt and pepper to taste. Serve with rice and toppings of: chopped peanuts, salted cashews, chutney, coconut, sliced bananas, etc.
