The olives for Nunez del Prado are grown using completely organic methods and are not treated with fertilizers or pesticides. The fruit is hand-picked, allowing for assessment of peak ripeness. Because bruised olives add more acidity to the oil and takes away from the delicacy, olives that have fallen on the ground are passed over. This is a great olive oil for everyday cooking and salads.
